Very light almond sponge cake with toffee caramel and raspberries





Sponge cake :)

Ingredients:
4 large free range eggs
1 tsp almond flavour 
100g (about 1/2 cub) of caster sugar 
4 tablespoons of plain flour
1 tablespoon of potato starch or corn flour
1 flat teaspoon of baking powder

Heat the oven to 180^C, grease and line the tin
Break all the eggs into the bowl and whisk them with a mixer for a while untill they're fluffy and then add the almond flavour and the sugar gradually still mixing until pale. Switch off the mixer and sieve the flours combined with baking sugar. Mix all ingredients gently until they combined and fill the tin using a spatula to remove all the mixture from the bowl. Place the tin in the oven as soon as possible and bake for 25 minutes. Do not open the oven until baked! 
If you used a round shaped tin your cake may need longer time to be baked, so check it by lancing with wooden skewer and bake until the skewer is dry.



Toffee caramel:


Ingredients:
100 g unsalted butter
Pinch of sea salt
3/4 cup brown sugar
1/3 cup white sugar
1/3 cup double cream
1/2 cup of water

200- 300 g fresh raspberries

Method:

Bring sugars, salt and water to boil and add the cream and the butter. Keep the caramel on the moderate heat as long as it gets thick and theady, do not stir. When the caramel is getting thicker add the handful of crushed nuts and keep them in the boiling caramel for a while. The toffee caramel must be thick and sticky but not cristalised. 

Once yu take the ready sponge cake from the oven - pour all the caramel on the cake and throw the raspberries over it.

Pszenno - żytni chleb na zakwasie // Wheat - Rye sourdough bread

Chleb pszenno-żytni na zakwasie i bez drożdży.


O zaletach kwasu chlebowego napisano wiele, więc nie będę się tu wymądrzać - dla mnie zaletą najważniejszą jest to, że gluten zawarty w mące jest lepiej przyswajalny gdy mąka jest ukwaszona, również praca jelit jest dużo sprawniejsza, co pomaga m.in. utrzymać dobrą wagę, albo stracić zbędne kilogramy.
Żeby wyhodować swój własny zakwas potrzeba tylko ceramicznego naczynia (nieprzezroczystego), mąki żytniej i czystej wody. Zakwas robi się w czasie 5-6 dni. Intensywność procesu fermentacji zależy od temperatury pomieszczenia i optymalna temperatura wynosi co najmniej 18 stopni celcjusza. Tak więc kuchnia jest najlepszym miejscem do przechowywania naszego zakwasu.
Pierwszego dnia 3-4 łyżki mąki rozrabia się z wodą, żeby utworzyła się płynna papka (gęstość jak ciasto naleśnikowe). Przykrywamy naczynie lnianą ściereczką i zostawiamy do następnego dnia w ciepłym miejscu - kuchnia nadaje się idealnie. Drugiego dnia dodajemy 2 łyżki mąki i odpowiednio trochę wody, mieszamy i znów przykrywamy, tę czynność powtarzamy przez kolejne 4 dni. Już drugiego dnia widać bąbelki na powierzchni, można wyczuć kwaskowaty zapach i smak, po 5-6 dniach zakwas jest gotowy i możemy go wykorzystać do pieczenia chleba. UWAGA! Troszkę zakwasu zostawiamy w małym słoiczku i trzymamy w lodówce jako "matkę" do kolejnego - im starsza jest nasza kultura bakterii, tym lepszy kolejny chlebek. Mój zakwas ma ok 2 lat, a w dobrych prywatnych piekarniach mają zakwasy 20-30 letnie!

Aby upiec chleb, mieszamy mąkę (ok3/4 kg (tu użyłam 50/50 żytnią i pszenną, można również dodać nasiona, rodzynki, suszone owoce, cokolwiek lubicie) i dodajemy sól do smaku, kilka łyżek oleju (ja lubię sezamowy, ale może być też inny), zakwas i ciepłą wodę i wyrabiamy ciasto, takie lepkie, ale nie płynne. Zostawiamy ciasto chlebowe na całą noc, przykryte i w ciepłym miejscu, aby spęczniało i rano wylewamy tylko do natłuszczonej foremki. Pieczenie - 180stopni przez ok 1 godzinę. 

"Matkę" można przechowywać w lodówce bezpiecznie nawet przez kilka miesięcy - niska temperatura hamuje rozwój bakterii.



Sourdough rye and wheat bread. No yeasts added



It's been written a lot about benefits from sourdough and I will not discover anything new. The most important benefit of eating sourdough bread is, as for me, a better gluten's tolerancy when the flour is soured and much better working digestive system which makes easier either loosing your weight or just keeping yourself fit. 
To breed your own sourdough you need only the ceramic pot, a rye flour and clean water. Making sourdough takes usual 5-6 days and fermentation process intensivity depends of the room temperature. Optimal temperature should be 18 Celsius degrees. So the best place to keep your sourdough is your kitchen! 
At the very first day 3-4 tablespoon of rye flour mix with the right amount of filtered water to get a thick pulp (thickeness like a pancake dough). Cover the pot with a linen cloth and leave it to the next day. On the second day add 2 tablespoons of flour and right amount of water and stear the dough properly, cover with the cloth and leave it. Repeat the same step for the next 4 days. Already on the second day you should see a bubbles on the dough and smell the sour. After 6 days sourdough is ready to use it for making the bread.
REMEMBER! A little bit of your bred sourdough leave in the jar and store in the fridge - it will be a "mother" for your next bread. The older is your bacteria culture, the better the next bread is and more precious. My sourdough is 2 years old now but in traditional old bakeries their sourdough is even 20 years old or more!

To make a bread, mix about 3/4 kg of flours (to this bread I used 50/50 rye and wheat), you can aldo add some seeds, dried fruits, raisins, whatever you like. Add some salt and a few spoons of an oil - my favourite is a sesame oil but you can use any oil you like, then you add your sourdough mix and a right amount of warm water to make a thick and little bit sticky dough. Leave it in the warm place overnight. Next day (it needs about 12 hours to grown properly) transfer the dough to the greased loaf tin and bake about 1 hour in 180 Celsius.  


The "Mother" you can storage in the fridge safely for months, the low temperature inhibits the growth of bacteria.
